What program can I use to store my music files to make them compatible with all mp3 players?

Is it possible to save music on one music program and put it on any brand of mp3?

I have both iTunes and SonicStage because I have an iPod and a sony music player, so I save my CDs on both iTunes and SonicStage, and end up having two versions of the same file on my PC! They are different formats.
